Up to 20×30 in you have a real choice. A 3mm panel is light enough to hang with confidence on a normal plastered wall, and it is comfortable to carry up stairs or ship to a relative. Past 20×30 in there is no 3mm option. Sizes such as 24×36 in, 30×40 in, 36×48 in and up to 48×96 in are made in 5mm only.
